Ingredients
300g green bean
300g sugar
15g arrowroot
3ml pomelo flower extract (or vanilla extract)
Preparation
Soak split green beans in water for 6 hours; remove the husk; put in a pot of water and simmer; transfer green beans to a closely woven basket and rub to powder; put the powder and sugar in the pot and bring to boil, stirring so that sugar dissolves.
Dissolve arrowroot in cold water and pour slowly into the pot until compote is very thick.
Remove from heat; leave it to get cool; add pomelo powder extract (or vanilla)l ladle into bowls; serve cool.
