Ingredients
500g lean and fat pork
30g sugar
50g spring onion
300g turnip
100g liquid lard
To taste: fish sauce, salt.

Preparation
Boil down sugar to make caramel sauce.

Wash and slice pork; season with the fish sauce, salt and caramel sauce; set aside to marinate.

Wash the spring onion; finely chop the green part, slice the white part. Wash and peel the turnip; cut into pieces; sprinkle with salt and toss slightly; strain off the pungent juice from the turnip.

Hear the fat in a preheat pot; fry the white part of spring onion until fragrant; add the pork and stir before seasoning with some fish sauce; add the turnip and stir; add the remaining caramel sauce; pour boiling water into the pot; cook, covered, over low heat until water boils down to cover 1/3 of the turnip and the pork is tender; add the green part of spring onion.
